Bio: Tarek Alameddine, originally from Aley - Lebanon, realized his passion for cooking as a college student. His passion took him to Les Roches, via the Royal Academy of Culinary Arts Jordan. Tarek applied twice to Noma - Copenhagen because he wanted to know more about the Danish chef, René Redzepi’s vision. The idea of using authentic local flavor to create a new contemporary gastronomic experience was captivating to Tarek. During his work as a Sous-chef at Noma, he focused on researching old levant techniques and ingredients that could be introduced to the dishes we serve. Tarek’s advice to the next generation is “Let your cooking be focused by the time, and place and season. Go out to nature and get inspired.”
